Ingredients

  • 8 oz. cherry jello
  • 4 c. boiling water
  • 2 c. miniature marshmallows
  • 2 c. pineapple, crushed and drained
  • 1/2 c. pecan pieces

Instructions

  1. Dissolve the cherry jello in boiling water.
  2. Pour a thin layer (about 1/2-inch deep) into a 9 x 13-inch salad pan and let it congeal.
  3. When the remaining gelatin thickens, stir in the miniature marshmallows, crushed pineapple, and pecan pieces.
  4. Fold in whipped topping carefully until well mixed.
  5. Pour this mixture over the congealed clear gelatin layer.
  6. Let the salad congeal overnight.
  7. When ready to serve, cut the jello into squares and turn the salad bottom side up on shredded lettuce so the clear red jello is on top and the creamy layer is underneath.
