Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 2 c. sugar
  • 1 1/2 c. vegetable oil
  • 4 eggs
  • 2 c. shredded carrots
  • 1 (8 oz.) can drained, crushed pineapple
  • 1/2 c. chopped nuts
  • approximately 4 oz. coconut to your taste

Instructions

  1. Lightly mix flour, baking powder, baking soda, salt and cinnamon in mixing bowl.
  2. Add sugar, oil and eggs.
  3. Beat 1 minute at medium.
  4. Stir in carrots, pineapple, nuts and coconut.
  5. Turn into 3 greased and floured 9-inch round pans or a large rectangular pan.
  6. Bake at 350° for 40 minutes or until it tests done.
  7. Cool in pan 10 minutes.
  8. Remove from pan and finish cooling.
  9. Ice with Cream Cheese Icing.
