Instructions
- Lightly mix flour, baking powder, baking soda, salt and cinnamon in mixing bowl.
- Add sugar, oil and eggs.
- Beat 1 minute at medium.
- Stir in carrots, pineapple, nuts and coconut.
- Turn into 3 greased and floured 9-inch round pans or a large rectangular pan.
- Bake at 350° for 40 minutes or until it tests done.
- Cool in pan 10 minutes.
- Remove from pan and finish cooling.
- Ice with Cream Cheese Icing.
