A delicious and easy 3-point nacho spread that combines creamy sour cream, flavorful salsa, black beans, and melted Monterey Jack cheese. Ingredients

  • 15 oz. can black beans, well drained
  • 1 c. fat-free sour cream
  • 1 1/4 c. thick salsa
  • 1/2 c. shredded reduced fat Monterey Jack cheese
  • 2 tsp. minced fresh cilantro (optional)

Instructions

  1. Blend beans and 1/4 cup salsa in a blender or food processor. Spoon into a 1-quart serving bowl.
  2. In a small bowl, stir together 1/4 cup salsa and sour cream.
  3. Drop spoonfuls of the sour cream mixture over the beans. Spread to cover.
  4. Spoon the remaining salsa over the sour cream layer.
  5. Sprinkle with shredded Monterey Jack cheese and minced cilantro, if desired.
  6. Cover and refrigerate for 2 to 24 hours before serving.
  7. Serve with reduced-fat crackers or baked Tostitos.
