Ingredients

  • 1 chicken, cut into pieces
  • 40 cloves garlic
  • 1 tsp. rosemary
  • 1 tsp. basil
  • 1 tsp. thyme
  • 1/4 cup olive oil
  • 10 small or medium potatoes, cut into quarters

Instructions

  1. Combine all ingredients except chicken and potatoes to create the herb-garlic mixture.
  2. Roll the chicken pieces in the mixture to coat thoroughly.
  3. Place the coated chicken into a baking pan and add the potatoes.
  4. Pour the remaining oil mixture over the chicken and potatoes.
  5. Cover and bake for 25 minutes.
  6. Turn the chicken pieces and continue cooking until the chicken is done and potatoes are tender.
