A fresh and colorful fruit-turkey salad combining crisp lettuce, tender turkey, and vibrant fruit flavors, perfect for a light, nutritious meal or entertaining guests.

Ingredients

  • 1 head iceberg lettuce
  • 1/4 cup salad oil
  • 2 teaspoons vinegar
  • 2 teaspoons salt
  • 1/2 teaspoon sweet basil
  • 1/4 teaspoon garlic powder
  • 2 cups cubed cooked turkey or chicken
  • 1/2 onion, thinly sliced into rings
  • 1 tomato, cubed
  • 1/2 avocado, peeled and sliced

Instructions

  1. Core, rinse, and drain the iceberg lettuce.
  2. Chill the lettuce in a plastic bag.
  3. Reserve 4 whole leaves for lettuce cups; shred enough lettuce to make 4 cups.
  4. Set aside the shredded lettuce.
  5. Blend salad oil, vinegar, salt, sweet basil, garlic powder, and pepper to make the dressing.
  6. Combine the dressing with cooked, cubed turkey or chicken, thinly sliced onion, and cubed tomato; toss gently to mix.
  7. Arrange the reserved whole lettuce leaves on 4 salad plates to form cups.
  8. Add the shredded lettuce into the lettuce cups.
  9. Top with the turkey mixture.
  10. Garnish with sliced avocado and orange sections.
  11. Serve immediately.
