Ingredients

  • 4 medium zucchini, cut into 1/2 inch pieces
  • 1/2 cup onion, chopped
  • 2 tablespoons margarine
  • 1/2 pint sour cream
  • 1 can cream of chicken soup
  • 1 cup carrots, grated
  • 1 package Stovetop stuffing, uncooked

Instructions

  1. Steam the zucchini and set it aside.
  2. In a skillet, sauté the grated carrots and chopped onion briefly; set aside.
  3. Combine the sour cream and the cream of chicken soup and gently add to the carrot and onion mixture.
  4. Gently stir in the dry stuffing mix.
  5. Add the cooked zucchini last and toss or stir gently.
  6. Transfer the mixture to a baking dish and bake at 350°F for 30-45 minutes.
  7. Check at 30 minutes and, if it's getting too brown, cover loosely with foil for the last 10-15 minutes.
