5-Bean Chili
Ingredients
- 3 lb. ground beef ⓘ
- 1 chopped onion ⓘ
- 1 can light red kidney beans ⓘ
- 1 can chick peas ⓘ
- 1 can dark red kidney beans ⓘ
- 1 can pinto beans ⓘ
- 1 can black-eyed peas ⓘ
- 1 (16 oz.) whole tomatoes, hand crushed ⓘ
- 1 (12 oz.) can beer ⓘ
- 2 cloves garlic
- 2 tsp. salt
- 2 tsp. cumin ⓘ
- red pepper flakes to taste ⓘ
- 2 Tbsp. chili powder ⓘ
- 1/2 to 1 tsp. cayenne pepper ⓘ
- olive oil ⓘ
- Cheddar cheese ⓘ
Instructions
- Saute onions in oil over medium-high heat.
- Cook until onion is transluscent.
- Add ground beef and garlic.
- Brown and drain (do not scorch garlic).
- Stir in remaining dry ingredients, except beans. Hand-crush tomatoes and add juice and all to mixture.
- Add beans and beer.
- Simmer 1 hour, stirring occasionally.
- Taste and adjust seasonings if desired (more cayenne and hot red pepper flakes for hotter chili).
