Ingredients

  • 1 lb ground turkey breast
  • 2 scallions, chopped (green only)
  • 1 teaspoon black pepper
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 2 egg whites
  • 2 (8 ounce) cans no-salt-added tomato sauce
  • 3 small roma tomatoes, diced
  • 1/3 cup white onion, chopped
  • 1/3 cup green bell pepper, chopped
  • 1 tablespoon parsley flakes
  • 1 tablespoon fresh garlic, minced
  • 1 teaspoon basil
  • 1 teaspoon oregano

Instructions

  1. Mix the meatball ingredients first in a large enough bowl to get your hands inches.
  2. Meatball ingredients are everything from the ground turkey down in the ingredients list.
  3. Mix turkey, green onions, spices and egg whites together in a large mixing bowl.
  4. Make golf ball sized meatballs and place on cookie sheet, lightly sprayed with cooking spray.
  5. Bake at 350 for 20 minutes, or until lightly browned.
  6. While the meatballs are baking, Start working on the sauce.
  7. In a small sauce pan, saute the onion, bell peppers and parsley flakes over medium-high heat for a minute or two.
  8. Add the tomao and tomato sauce and lower heat to low.
  9. Add garlic, basil, oregano, red wine vinegar and packets of sugar substitute to pan. stir well and let simmer for 5 minutes.
  10. Do a taste test; add more kick or sweet as needed. Continue simmering 5 more minutes or until sauce thickens slightly.
  11. Combine your sauce and meatballs in a large enough pot and warm for about 5 minutes as the flavors join.
