Accordion Potatoes

Accordion Potatoes are beautifully sliced baked potatoes with crispy, golden edges and a tender interior, perfect as a side dish for family dinners or special occasions.

Ingredients

  • 6 medium baking potatoes
  • oil
  • 4 Tbsp. melted butter
  • 2 Tbsp. grated Parmesan
  • 1 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. paprika

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Peel potatoes and drop into cold water.
  3. Cut potatoes into thin slices, but do not cut all the way through. Place a wooden spoon in front of the potato and cut only until the knife connects with the spoon handle.
  4. Drop potatoes back into the cold water until all are sliced.
  5. Drain and pat them dry. Generously oil a 9 x 13-inch baking dish.
  6. Arrange potatoes, sliced side up, in a single layer in the prepared dish.
  7. Brush with 2 tablespoons of melted butter and sprinkle with 1 1/4 teaspoons of salt and 1/8 teaspoon of pepper.
  8. Bake for 30 to 45 minutes.
  9. Add remaining 2 tablespoons of melted butter to the baking dish and baste potatoes occasionally.
  10. Dust with 2 tablespoons of grated Parmesan and 1 teaspoon of paprika, then roast another 15 to 20 minutes or until golden brown.
  11. Potatoes should have opened like a fan and be crispy on the edges.
