Ingredients

  • 1 lb hamburger
  • 1 sliced onion
  • 1 can diced tomatoes
  • 1 can green beans
  • 1 can whole kernel corn
  • 10 to 12 potatoes
  • salt and pepper to taste

Instructions

  1. Brown the hamburger and sliced onion in a skillet over medium heat.
  2. Drain excess fat and set aside.
  3. Slice potatoes into thin to medium slices.
  4. Arrange a layer of potatoes in the bottom of a 4-quart pan.
  5. Sprinkle a small amount of the cooked hamburger mixture over the potatoes.
  6. Add one-third of the canned diced tomatoes, green beans, and corn, including liquids.
  7. Repeat layering: hamburger mixture, vegetables, and tomatoes, seasoning each layer with salt and pepper.
  8. Finish with a final layer of potatoes on top.
  9. If the liquids do not reach the top, add a little water to cover.
  10. Bake at 350°F until the potatoes are tender, about 60 minutes.
