Almond Dream Bars combine crunchy graham cracker crust, sweet coconut, dried apricots, and sliced almonds for a delightful, nutty treat perfect for sharing and satisfying a sweet tooth.

Ingredients

  • 18 graham crackers
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup butter
  • 1/2 cup undiluted evaporated milk
  • 1 cup graham cracker crumbs
  • 1 cup sliced almonds
  • 1 cup flaked coconut
  • 1/2 cup chopped dried apricots
  • Almond Icing (see directions following)

Instructions

  1. Line the bottom of an buttered 8-inch square pan with 9 graham crackers.
  2. In a medium saucepan, combine brown sugar, butter, and evaporated milk.
  3. Cook over medium heat, stirring constantly, until the mixture comes to a full boil.
  4. Remove from heat and immediately stir in graham cracker crumbs, 3/4 cup of sliced almonds, coconut, and chopped dried apricots.
  5. Reserve the remaining almonds for topping.
  6. Pour the mixture into the prepared pan and spread evenly.
  7. Sprinkle remaining almonds on top for garnish.
  8. Allow to cool completely before cutting into bars.
