Ingredients

  • 1 c. white sugar
  • 1 egg
  • 1 c. ground almonds
  • 2 Tbsp. cream or milk
  • 1 Tbsp. butter
  • 1/4 tsp. almond extract

Instructions

  1. Beat cream, sugar, butter, and egg together until well creamed.
  2. Boil gently in a double boiler for 10 to 15 minutes; do not let it burn.
  3. Remove from heat and stir in ground almonds.
  4. Let cool to lukewarm.
  5. Add almond extract when cool.
  6. Spread icing on a cold cake.
  7. Cover the almond icing with white butter icing.
