Ingredients

  • 3/4 cup whole almonds or 1 1/4 cups ground almonds
  • 3/4 cup sugar
  • 3 egg whites
  • 1 tablespoon almond extract

Instructions

  1. Mix ground almonds, sugar, and unbeaten egg whites together in a bowl.
  2. Cook over moderate heat, stirring constantly, for about 8 to 10 minutes; do not boil the mixture.
  3. Test the batter by pulling a knife through it; if both sides stay clean, the mixture has reached the right stage of thickness.
  4. Remove from heat.
  5. Add almond extract and mix well.
