Ingredients

  • 1/2 lb. lentils
  • 1 to 2 oz. butter
  • 1 or 2 onions
  • 2 oz. flour
  • salt
  • 1 pt. lentil water or stock
  • pinch of herbs (thyme and 1/4 tsp. mixed herbs)
  • flavoring

Instructions

  1. Soak the lentils for 12 hours.
  2. Place the lentils in boiling water and cook until tender.
  3. Heat the butter in a frying pan and fry the sliced onions until brown.
  4. Remove the onions from the pan. Add the flour and fry for a few minutes.
  5. Gradually add the lentil cooking water or stock, stirring constantly.
  6. Bring the mixture to a boil; add salt, pepper, herbs, and flavoring.
  7. Turn the cooked lentils into a pie dish or meat tin.
  8. Moisten with as much sauce as required.
  9. Cover with well mashed potatoes.
  10. Bake in the oven for 1 hour at mark 7 of the
  11. regulo oven setting.
