- Soak the lentils for 12 hours.
- Place the lentils in boiling water and cook until tender.
- Heat the butter in a frying pan and fry the sliced onions until brown.
- Remove the onions from the pan. Add the flour and fry for a few minutes.
- Gradually add the lentil cooking water or stock, stirring constantly.
- Bring the mixture to a boil; add salt, pepper, herbs, and flavoring.
- Turn the cooked lentils into a pie dish or meat tin.
- Moisten with as much sauce as required.
- Cover with well mashed potatoes.
- Bake in the oven for 1 hour at mark 7 of the
- regulo oven setting.
