Ingredients

  • 1 cup shortening
  • 1 1/4 cups sugar
  • 2 eggs
  • 2 teaspoons almond extract
  • 5 cups flour
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1 cup sour cream
  • 1 cup almonds, ground in food processor

Instructions

  1. Cream the shortening and sugar.
  2. Add beaten eggs.
  3. Blend in almond extract.
  4. Sift dry ingredients (flour, soda, salt).
  5. Add alternately with sour cream and ground almonds to the creamed mixture.
  6. Divide dough into 6 parts.
  7. Shape each into 15-inch long rolls.
  8. Place 3 rolls on each of two ungreased cookie sheets, allowing space between as they spread.
  9. Bake at 350°F (175°C) for 30 minutes.
  10. Remove rolls from pans and cut diagonally into 3/4-inch slices.
  11. Place slices, cut side down, on a cookie sheet.
  12. Return to oven and toast for 10 to 15 minutes until brown.
  13. Turn the rusks over and toast the other side.
  14. Store in a tightly covered container.
