Almond Torte

Ingredients

  • 3/4 cup fine cracker crumbs
  • 1 teaspoon baking powder
  • 3 egg whites
  • 1 teaspoon salt
  • 3/4 cup chopped pecans
  • large can peaches, drained and chilled

Instructions

  1. Combine cracker crumbs and baking powder.
  2. Beat egg whites with salt and almond flavoring until stiff.
  3. Gradually add sugar, beating well after each addition.
  4. Fold in crumb mixture and chopped pecans into the beaten egg whites.
  5. Spread the mixture in the bottom of a 9-inch pie plate.
  6. Bake at 350°F for 25 minutes or until golden brown.
  7. Allow to cool, then layer drained and chilled peaches on top.
  8. Serve topped with whipped cream or Cool Whip.
