Ingredients

  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • 2 1/2 to 3 lb. chicken
  • 1/4 cup oil
  • dash of pepper
  • 3/4 cup water
  • 2 chicken bouillon cubes
  • 1 egg
  • 3 Tbsp. lemon juice
  • 2 Tbsp. chopped parsley

Instructions

  1. Combine flour, salt, and pepper in a shallow dish.
  2. Dredge the chicken with the flour mixture and brown lightly on all sides in oil in a skillet.
  3. Add water and bouillon cubes; cover and simmer about 30 minutes, or until chicken is tender.
  4. Remove chicken from the pan and set aside.
  5. In the skillet, blend beaten egg and lemon juice into the stock.
  6. Add chopped parsley and heat gently, avoiding boiling.
  7. Serve the sauce over the cooked chicken.
