Alta's Rolls are soft, fluffy, homemade bread rolls with a slightly sweet flavor, perfect for breakfast, sandwiches, or dinner sides, appealing to both beginners and experienced bakers.

Instructions
- Mix together 2 cups of lukewarm water, sugar, and salt.
- Dissolve yeast in 1/2 cup warm water and add to the mixture.
- Stir in eggs and shortening.
- Gradually add 7 to 7 1/2 cups of flour, first with a spoon and then by hand until the dough begins to leave the sides of the bowl.
- Turn the dough out onto a lightly floured board and knead until smooth, elastic, and not sticky.
- Place dough in a greased bowl, turning once to oil the surface. Cover with a damp cloth and let rise until doubled in size (about 1 1/2 to 2 hours).
- Punch down the dough, pull edges into the center, and turn completely over in the bowl.
- Let rise again until almost doubled (30 to 45 minutes).
- Shape the dough into rolls and place on a baking sheet.
- Let the rolls rise until light (15 to 20 minutes).
- Bake at 425°F (220°C) for 12 to 20 minutes until golden brown.
