Alta's Rolls are soft, fluffy, homemade bread rolls with a slightly sweet flavor, perfect for breakfast, sandwiches, or dinner sides, appealing to both beginners and experienced bakers.

Ingredients

  • 2 c. lukewarm water
  • 1/2 c. sugar
  • 2 tsp. salt
  • 2 Tbsp. yeast
  • 1/2 c. warm water
  • 2 eggs
  • 1/2 c. soft shortening
  • 7 to 7 1/2 c. flour

Instructions

  1. Mix together 2 cups of lukewarm water, sugar, and salt.
  2. Dissolve yeast in 1/2 cup warm water and add to the mixture.
  3. Stir in eggs and shortening.
  4. Gradually add 7 to 7 1/2 cups of flour, first with a spoon and then by hand until the dough begins to leave the sides of the bowl.
  5. Turn the dough out onto a lightly floured board and knead until smooth, elastic, and not sticky.
  6. Place dough in a greased bowl, turning once to oil the surface. Cover with a damp cloth and let rise until doubled in size (about 1 1/2 to 2 hours).
  7. Punch down the dough, pull edges into the center, and turn completely over in the bowl.
  8. Let rise again until almost doubled (30 to 45 minutes).
  9. Shape the dough into rolls and place on a baking sheet.
  10. Let the rolls rise until light (15 to 20 minutes).
  11. Bake at 425°F (220°C) for 12 to 20 minutes until golden brown.
