Ingredients

  • 30 to 40 medium tomatoes
  • 3 to 4 medium onions
  • 3 to 4 bell peppers
  • 10 to 20 jalapeno peppers
  • 3 Tbsp. salt
  • 1 tsp. pepper
  • 2 Tbsp. garlic powder
  • 2 Tbsp. sugar
  • 3/4 tsp. paprika
  • 1/3 cup vinegar

Instructions

  1. Dip tomatoes in boiling water to remove skins.
  2. Chop all vegetables and put in a large pot or dishpan.
  3. Use a food processor to blend the peppers.
  4. Cook on medium heat for 20 to 30 minutes or until the mixture begins to thicken.
  5. Dissolve 3 tablespoons of cornstarch in 1/2 cup of water.
  6. Add the cornstarch mixture to the salsa and cook for a few minutes longer to thicken.
  7. Put the hot salsa into sterilized jars and seal.
