Ingredients

  • 1 1/4 cups vegetable oil
  • 2 cups sugar
  • 2 large eggs
  • 2 tablespoons vanilla
  • 3 cups sifted all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 3 cups apples peeled and chopped
  • 1 cup pecans chopped

Instructions

  1. Preheat oven to 350°F. Grease and flour a bundt pan.
  2. Cream together vegetable oil and sugar; add eggs and vanilla, and beat just until blended.
  3. In a separate bowl, combine sifted all-purpose flour, cinnamon, salt, baking soda, and nutmeg; mix well.
  4. Add the dry ingredients to the sugar mixture and stir just until combined.
  5. Stir in peeled and chopped apples and chopped pecans.
  6. Pour the batter into the prepared bundt pan.
  7. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 5 minutes, then invert onto a wire rack and cool completely.
  9. Place the cake on a serving plate and pour glaze over the top before serving.
