Amber's favorite Mexican cornbread combines cheesy, spicy jalapenos, sweet corn, and tender onion for a flavorful, moist bread perfect as a side or snack for any occasion.

Ingredients

  • 2 cups self-rising cornmeal
  • 2 eggs
  • 2/3 cup Wesson oil
  • 1 cup buttermilk
  • 1 (3 oz) can creamed corn
  • 1 onion, chopped
  • 4 to 5 jalapeno peppers, chopped
  • 1 cup grated cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix all ingredients together in a bowl until well combined.
  3. Pour the mixture into a skillet or spoon into a muffin pan.
  4. Bake in the preheated oven for 1 hour if using a skillet, or for 35 minutes if using muffin tins, until golden brown and cooked through.
