- On a lightly floured surface, roll the Pillsbury All-Ready pie crust into a 12-inch circle.
- Place the rolled-out crust into a 10-inch tart pan or quiche dish (or a 9-inch pie plate).
- Prick the bottom and sides of the pastry with a fork.
- Bake at 400°F for 9 to 11 minutes or until golden brown.
- Allow the crust to cool completely.
- In a bowl, beat the softened cream cheese with sugar and lemon juice until smooth.
- Spread the cream cheese mixture evenly over the cooled crust.
- Warm the apricot preserves with water and brush it over the cream cheese layer.
- Arrange assorted fresh fruit on top of the cream cheese layer.
- Spread whipped cream over the fruit or pipe it decoratively.
- Chill the tart before serving.
