Ingredients

  • 1 Pillsbury All-Ready pie crust
  • 8 oz. cream cheese, softened
  • 1/4 cup sugar
  • 2 tsp. lemon juice
  • 1/2 cup whipped cream
  • assorted fresh fruit
  • 1/4 cup apricot preserves
  • 1 Tbsp. water

Instructions

  1. On a lightly floured surface, roll the Pillsbury All-Ready pie crust into a 12-inch circle.
  2. Place the rolled-out crust into a 10-inch tart pan or quiche dish (or a 9-inch pie plate).
  3. Prick the bottom and sides of the pastry with a fork.
  4. Bake at 400°F for 9 to 11 minutes or until golden brown.
  5. Allow the crust to cool completely.
  6. In a bowl, beat the softened cream cheese with sugar and lemon juice until smooth.
  7. Spread the cream cheese mixture evenly over the cooled crust.
  8. Warm the apricot preserves with water and brush it over the cream cheese layer.
  9. Arrange assorted fresh fruit on top of the cream cheese layer.
  10. Spread whipped cream over the fruit or pipe it decoratively.
  11. Chill the tart before serving.
