Ingredients

  • 3 cups sugar
  • 4 eggs
  • 1 cup vegetable oil
  • 1 lb. can pumpkin
  • 1.5 cups flour
  • 2 tsp salt
  • 0.5 tsp nutmeg
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 0.66 cup water

Instructions

  1. Mix sugar, beaten eggs, and vegetable oil together.
  2. Add pumpkin to the mixture and combine well.
  3. In a separate bowl, mix flour, salt, nutmeg, baking soda, and cinnamon.
  4. Add dry ingredients to the pumpkin mixture, stirring just until combined.
  5. Add water and stir until smooth.
  6. Pour batter into two greased and floured 9x5 loaf pans.
  7. Bake at 350°F (175°C) for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
