Ingredients

  • pastry for 9-inch 2-crust pie
  • 2 cups seedless raisins
  • 2 cups water
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • a pinch of salt
  • 1 tablespoon cider vinegar
  • 2 tablespoons butter
  • 1 teaspoon grated orange rind (optional)

Instructions

  1. Preheat oven to 400°F.
  2. Line the bottom of a 9-inch pie pan with half of the pastry.
  3. In a medium saucepan, simmer the raisins and 2/3 cup of water over medium heat for 5 minutes.
  4. In a small bowl, combine the brown sugar, granulated sugar, cornstarch, ground cinnamon, ground allspice, and a pinch of salt.
  5. Gradually stir in the remaining 1 1/3 cups of water.
  6. Add the mixture to the raisins, stirring until the mixture bubbles up.
  7. Add the cider vinegar, butter, and grated orange rind (if using).
  8. Continue cooking until the butter is melted and mixture is lukewarm.
  9. Pour the filling into the uncooked pie shell.
  10. Cover with the second crust, cut slits to allow steam to escape.
  11. Bake for 25 minutes or until golden brown.
  12. Cool completely before cutting.
