Ingredients

  • 3 eggs
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 2 cups grated zucchini
  • 1 teaspoon vanilla
  • 3 cups all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup raisins or chopped nuts

Instructions

  1. Heat oven to 325°F (160°C).
  2. Beat eggs until frothy.
  3. Stir in brown sugar, granulated sugar, vegetable oil, zucchini, and vanilla.
  4. Combine all-purpose flour, cinnamon, baking powder, baking soda, and salt in a separate bowl.
  5. Stir dry ingredients into zucchini mixture until well blended.
  6. Fold in raisins or chopped nuts.
  7. Pour batter into 2 well-greased 9 x 5 x 3-inch loaf pans.
  8. Bake for 1 hour.
  9. Cool in pans for 10 minutes.
  10. Remove loaves from pans and transfer to a wire rack.
  11. Allow to cool completely before slicing.
