Any Bean Salad

Ingredients

  • 1 (16 oz.) can beans (red, kidney, chickpeas or a combination)
  • 1 Tbsp. chopped green pepper
  • 1 Tbsp. chopped pimiento
  • 1 Tbsp. chopped green onion
  • 2 Tbsp. oil
  • 1/4 c. vinegar
  • 1/2 tsp. oregano
  • freshly ground black pepper (to taste)
  • 3 sprigs parsley, chopped

Instructions

  1. Drain the beans; combine the beans, green pepper, pimiento and onion in a bowl.
  2. Mix together oil, vinegar, oregano, parsley and pepper.
  3. Pour over the vegetables and mix well.
  4. Marinate in the refrigerator at least 3 hours.
