Ingredients

  • 4 (4 1/2 oz.) jars button mushrooms
  • 2 qt. cherry tomatoes
  • 2 c. white vinegar
  • 2 Tbsp. oil
  • 1 chopped garlic clove
  • 2 tsp. marjoram
  • 1 1/2 tsp. salt
  • 1 tsp. sage

Instructions

  1. Combine in a large bowl the mushrooms, cherry tomatoes, white vinegar, oil, garlic, marjoram, salt, sage, pepper, and dry mustard.
  2. Cover the bowl with plastic wrap or a lid.
  3. Marinate in the refrigerator for 12 to 48 hours.
  4. Stir occasionally during marination.

Tips & Substitutions

For a deeper flavor, consider adding a splash of balsamic vinegar or a pinch of crushed red pepper for heat. If button mushrooms are unavailable, cremini or shiitake mushrooms can serve as excellent substitutes. Ensure the vegetables are fully submerged in the marinade for even flavor distribution. Stirring occasionally helps enhance the marination process.

Serving Suggestions

These kebabs are perfect as an appetizer or served alongside a fresh salad like Greek Black-Eyed Pea Salad. You can also pair them with a refreshing drink such as Sangria For A Crowd. Serve them on skewers for an appealing presentation, or toss them with some greens and a drizzle of Mango Vinaigrette(Tropical Sauce) for a light meal.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will continue to develop, making them even tastier the next day. To reheat, gently warm them in a skillet over low heat, ensuring not to overcook the tomatoes, which can lose their shape.
