Ingredients

  • 1 red onion
  • 1 bell pepper, seeded
  • 2 medium zucchini
  • 2 cloves garlic, chopped
  • 1 cup frozen corn, thawed
  • 2 cups mushrooms, rinsed and sliced
  • 2 teaspoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried tarragon
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 450°F.
  2. Cut the red onion, bell pepper, and zucchini into chunks; place in a large bowl.
  3. Add the chopped garlic, thawed corn, and sliced mushrooms to the bowl.
  4. Coat the vegetables with olive oil.
  5. Stir in the dried rosemary, tarragon, and salt.
  6. Mix well to combine all ingredients evenly.
  7. Place the seasoned vegetables in a large baking dish.
  8. Bake until tender, about 20 minutes.
