Ingredients

  • 2 cups apples (Granny Smith)
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon
  • 2 cups sugar
  • 1 cup cooking oil
  • 4 eggs
  • 1/4 cup orange juice
  • 2 teaspoons vanilla extract
  • 3 cups flour, sifted
  • 1 tablespoon baking powder

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Peel, core, and chop the apples into small pieces.
  3. Mix the chopped apples with 3 tablespoons of sugar and cinnamon; set aside.
  4. In a large bowl, combine 2 cups of sugar, 1 cup of cooking oil, and 4 eggs; beat well.
  5. Add 1/4 cup of orange juice and 2 teaspoons of vanilla extract to the wet mixture.
  6. Gradually add the sifted 3 cups of flour and 1 tablespoon of baking powder, mixing until smooth.
  7. Fold in the cinnamon-sugar coated apples into the batter.
  8. Pour the batter into a greased baking pan.
  9. Bake for approximately 40 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before serving.
