- Preheat oven to 325°F (160°C).
- Peel, core, and chop the apples into small pieces.
- Mix the chopped apples with 3 tablespoons of sugar and cinnamon; set aside.
- In a large bowl, combine 2 cups of sugar, 1 cup of cooking oil, and 4 eggs; beat well.
- Add 1/4 cup of orange juice and 2 teaspoons of vanilla extract to the wet mixture.
- Gradually add the sifted 3 cups of flour and 1 tablespoon of baking powder, mixing until smooth.
- Fold in the cinnamon-sugar coated apples into the batter.
- Pour the batter into a greased baking pan.
- Bake for approximately 40 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
