Ingredients

- 1/4 cup butter or margarine ⓘ
- 3 cups thick apple slices ⓘ
- 4 1/2 teaspoons cornstarch ⓘ
- 4 1/2 teaspoons water
- 2 tablespoons lemon juice ⓘ
- 1 deep 9-inch pie shell, baked ⓘ
- 1 (8 oz.) package cream cheese, softened
- 1 egg ⓘ
- 1/2 cup almonds or pecans, chopped ⓘ
- 1/2 cup flaked coconut ⓘ
Instructions
- Combine 2/3 cup sugar, 1/2 teaspoon orange rind, cinnamon, nutmeg, orange juice, and butter in a large saucepan; bring to a boil, stirring until sugar dissolves.
- Add apple slices and simmer until tender and translucent, about 8 minutes.
- Dissolve cornstarch in water; stir into the apple mixture.
- Cook, stirring, until mixture boils and thickens.
- Add lemon juice and cool to room temperature.
- Spoon the apple filling into the baked pie shell.
- Whip the cream cheese until fluffy; gradually add 1/3 cup sugar and 1/2 teaspoon orange rind.
- Beat in the egg.
- Spoon the cream cheese mixture over the apples.
- Sprinkle with chopped almonds or pecans and flaked coconut.
- Bake at 350°F (175°C) for 20 minutes or until golden.
- Chill before serving.
