Ingredients

  • 2 tablespoons olive oil
  • 2 red onions, sliced thinly
  • 1 cup cider vinegar
  • 2 granny smith apples, peeled,cored,diced
  • 1 cup cherries, pitted
  • 1/2 inch peeled ginger, minced
  • 1/2 teaspoon allspice

Instructions

  1. heat oil in a saucepan, add onions, lower heat, cover and simmer for 10 minutes.
  2. remove lid, add remaining ingredients.
  3. stir and simmer 25 minutes.
  4. serve chilled or at room temperature.
