Apple Cider Rarebit

Ingredients

  • 1 1/2 tbsp butter
  • 1 tbsp flour
  • 1/2 cup cider
  • 1/2 cup 2% milk
  • 3 oz Cheddar cheese, grated
  • 1 tsp mustard powder
  • 4 slices whole wheat bread, toasted
  • 1/2 tsp paprika
  • None None thinly sliced apple, to serve

Instructions

  1. Melt butter in a small saucepan over medium heat. Add flour and cook, stirring, for 1 min. Gradually whisk in cider and milk, stirring until smooth. Cook, stirring, until mixture boils and thickens. Simmer for 3 mins. Stir in cheese and mustard powder. Season to taste.
  2. Preheat broiler. Line a baking tray with parchment paper. Arrange bread on tray and top evenly with cheese sauce. Sprinkle with paprika. Broil for 3-4 mins, until bubbling and just beginning to brown. Serve hot with apple slices.
