Ingredients

  • 2 c. crushed vanilla wafers
  • 1 c. shredded coconut
  • 1 tsp. cinnamon
  • 1 Tbsp. melted butter
  • 4 apples, thinly sliced
  • 1 1/2 tsp. liquid sweetener
  • 1/2 c. apple jelly

Instructions

  1. Preheat oven to 350°F.
  2. Combine crushed vanilla wafers, shredded coconut, and cinnamon in a bowl.
  3. In a shallow 1-quart casserole, layer thinly sliced apples and the crumb mixture.
  4. Alternate layers of apples and crumb mixture, ending with apples on top.
  5. Drizzle with melted butter, liquid sweetener, and spread apple jelly over the top.
  6. Bake in the preheated oven for about 30 minutes until bubbly and golden.
