Ingredients

  • 3 medium tart apples
  • 1 cup margarine
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup sour cream
  • 2 2/3 cups sifted flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 teaspoons cinnamon
  • dash of nutmeg

Instructions

  1. Quarter, core, and peel the apples, then cut into 1-inch cubes.
  2. Spread the apples evenly on a greased cookie sheet.
  3. Bake at 350°F for 30 minutes until apples are tender but not mushy.
  4. Remove from oven and let cool.
  5. In a bowl, beat 1/2 cup margarine until creamy; add 1/2 cup sugar and beat well.
  6. Add eggs one at a time, beating well after each addition.
  7. Blend in sour cream.
  8. Sift together 2 cups flour, baking soda, baking powder, salt, and 2 teaspoons cinnamon.
  9. Fold the sifted dry ingredients into the margarine mixture.
  10. Gently fold in the baked apples.
  11. Pour half of the batter into a greased, wax paper-lined 9 x 5 x 3-inch loaf pan.
  12. Cut remaining margarine into remaining flour, sugar, cinnamon, and nutmeg until crumbly.
  13. Sprinkle half of the crumb mixture over the batter.
  14. Pour in the remaining batter.
  15. Sprinkle with the remaining crumb mixture.
  16. Bake at 350°F for 50 to 60 minutes until browned and a toothpick inserted near the center comes out clean.
  17. Cool in the pan on a rack for 10 minutes, then carefully remove from the pan.
