Ingredients

  • 2 cups well-sweetened applesauce
  • 2 eggs
  • 2 tablespoons lemon juice
  • 1 tablespoon flour
  • few grains salt
  • 1 pie crust

Instructions

  1. Combine applesauce, lemon juice, salt, flour, and well-beaten egg yolks in a bowl.
  2. Cook the mixture over hot water until thick and smooth.
  3. Fold in stiffly beaten egg whites.
  4. Pour the filling into a pastry-lined pie pan.
