Ingredients

  • 2 lb. apples
  • 1 Tbsp. lemon juice
  • 3/4 to 1 cup sugar
  • 2 Tbsp. all-purpose flour
  • 1/2 to 1 tsp. ground cinnamon
  • dash of ground nutmeg
  • pastry for a double-crust pie
  • 2 Tbsp. butter or margarine

Instructions

  1. Peel, core, and thinly slice the apples.
  2. Sprinkle the sliced apples with lemon juice, if desired.
  3. Combine sugar, flour, ground cinnamon, ground nutmeg, and a dash of salt.
  4. Mix the dry ingredients with the apples until well coated.
  5. Prepare the pastry for a double-crust pie and fit it into a pie dish.
  6. Fill the pastry with the apple mixture.
  7. Dot the filling with small pieces of butter or margarine.
  8. Cover with the top crust and crimp the edges to seal.
  9. Brush the top crust with milk and sprinkle with sugar, if desired.
  10. Cover the edges of the pie with foil to prevent over-browning.
  11. Bake in a preheated 375°F (190°C) oven for 25 minutes.
  12. Remove the foil and bake for an additional 20 to 25 minutes until golden brown.
