Ingredients

  • 20 oz. unsweetened pineapple chunks
  • 1/4 cup reduced fat margarine
  • 2 Tbsp. lemon juice
  • 1 Tbsp. cornstarch
  • 2 Tbsp. water
  • artificial sweetener equivalent to 2 Tbsp. sugar
  • 3 cups chopped unpeeled red apples
  • 2 cups green grapes
  • 1 can mandarin orange slices

Instructions

  1. Drain pineapple juice into a saucepan and add margarine and lemon juice; cook over medium heat until margarine is melted.
  2. Mix cornstarch and water until smooth, then add to the juice mixture.
  3. Bring to a boil and cook for 2 minutes.
  4. Reduce heat and add artificial sweetener; cool to room temperature.
  5. Pour the sauce over the chopped fruit and toss to coat.
  6. Chill for at least 1 hour or overnight before serving.
