Ingredients

  • 1 (1 lb. 4 1/2 oz.) can pineapple chunks
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1/4 cup lemon juice
  • 3 cups sliced tart cooking apples
  • 4 slices dry bread, broken into coarse crumbs
  • 1/4 pound processed cheese spread, grated

Instructions

  1. Drain pineapple; reserve 3/4 cup of the liquid.
  2. Combine sugar, cornstarch, and salt in a heavy saucepan; add the reserved pineapple juice.
  3. Cook, stirring constantly, until the mixture thickens.
  4. Remove from heat; stir in lemon juice.
  5. Layer sliced tart apples, pineapple chunks, and grated processed cheese spread in a buttered 2-quart casserole dish. Pour the sauce over the layers before adding the last layer of crumbs and cheese.
  6. Sprinkle broken dry bread crumbs and grated cheese on top.
  7. Cover and bake in a 350°F oven for about 1 hour, or until the apple slices are tender.
