Ingredients

  • 3 cups sliced tart apples or pears, peeled or unpeeled
  • 2 tablespoons arrowroot powder or cornstarch
  • 1/4 cup honey or other liquid sweetener
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/2 cup raisins
  • 1 tablespoon sugar
  • 4 sheets phyllo dough
  • butter flavored cooking spray

Instructions

  1. Preheat oven to 400°F.
  2. Combine sliced apples or pears and apple juice in a saucepan over medium-high heat; simmer for 3 minutes.
  3. In a small bowl, stir together arrowroot powder or cornstarch, honey or liquid sweetener, ground cinnamon, and ground cardamom.
  4. Add the spice mixture to the apple mixture; simmer for 1 minute, stirring constantly.
  5. Remove from heat; add raisins and sugar.
  6. Lightly spray each sheet of phyllo dough with butter-flavored cooking spray and stack them on top of one another.
  7. Spoon the filling along one of the short edges of the stacked phyllo sheets.
  8. Fold in the two longer edges to create sides that prevent filling from leaking out.
  9. Starting at the short edge with the filling, roll the sheets into a log, seam side down, and place on a nonstick baking sheet. Lightly spray the roll with cooking spray.
  10. Bake for 30 minutes, then let cool before slicing.
