Apple-Raisin Strudel
A delightful apple-raisin strudel featuring flaky phyllo, warm spices, and sweet fruit filling—perfect for dessert or a cozy snack for family and friends.

Instructions
- Preheat oven to 400°F.
- Combine sliced apples or pears and apple juice in a saucepan over medium-high heat; simmer for 3 minutes.
- In a small bowl, stir together arrowroot powder or cornstarch, honey or liquid sweetener, ground cinnamon, and ground cardamom.
- Add the spice mixture to the apple mixture; simmer for 1 minute, stirring constantly.
- Remove from heat; add raisins and sugar.
- Lightly spray each sheet of phyllo dough with butter-flavored cooking spray and stack them on top of one another.
- Spoon the filling along one of the short edges of the stacked phyllo sheets.
- Fold in the two longer edges to create sides that prevent filling from leaking out.
- Starting at the short edge with the filling, roll the sheets into a log, seam side down, and place on a nonstick baking sheet. Lightly spray the roll with cooking spray.
- Bake for 30 minutes, then let cool before slicing.
