Ingredients

  • 1 oz. compressed yeast
  • 2/3 cup warm milk
  • 1/2 cup sifted flour
  • 3 egg yolks
  • 1 cup milk
  • 2 cups flour

Instructions

  1. Combine yeast, warm milk, and 1/2 cup flour; set aside to rise until foamy.
  2. Beat egg yolks in a separate bowl.
  3. Add the yeast mixture to the egg yolks and mix well.
  4. Add remaining ingredients: milk, flour, and beaten egg yolks; beat until smooth.
  5. Cover the batter and let it rise until it doubles in size.
  6. Preheat about 2 1/2 cups of oil in a skillet over medium heat.
  7. Drop batter by tablespoonfuls into hot oil.
  8. Brown the fritters on each side until golden.
  9. Remove from oil and drain on paper towels.
  10. Sprinkle with sugar or serve with sour cream, if desired.
