- Peel and remove seeds from the cucumber rings.
- Mix 2 cups of pickling lime with 8 1/2 quarts of water and pour over the cucumber rings.
- Let stand for 24 hours.
- Drain off the lime solution and wash the cucumber rings.
- Soak the rings in plain water for 3 hours, then drain.
- Simmer the cucumber rings in 1 cup of vinegar, red food coloring, alum, and enough water to cover for about 2 hours.
- Drain and discard the cooking liquid.
