Ingredients

  • 2 gallons large cucumber rings
  • 2 cups pickling lime
  • 8 1/2 quarts water
  • 1 cup vinegar
  • 1/2 bottle red food coloring
  • 3 tablespoons alum
  • water to cover
  • 2 cups vinegar
  • 2 cups water

Instructions

  1. Peel and remove seeds from the cucumber rings.
  2. Mix 2 cups of pickling lime with 8 1/2 quarts of water and pour over the cucumber rings.
  3. Let stand for 24 hours.
  4. Drain off the lime solution and wash the cucumber rings.
  5. Soak the rings in plain water for 3 hours, then drain.
  6. Simmer the cucumber rings in 1 cup of vinegar, red food coloring, alum, and enough water to cover for about 2 hours.
  7. Drain and discard the cooking liquid.
