Ingredients

  • 3 ripe bananas
  • 1 cup sugar
  • 1/2 cup applesauce
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups flour

Instructions

  1. Place bananas in a large bowl and mash with an electric mixer.
  2. Stir in the sugar and let stand for 15 minutes.
  3. Add the applesauce and eggs and beat well.
  4. Beat in the baking soda, baking powder, salt, and vanilla extract, then gradually beat in the flour, mixing thoroughly.
  5. Pour the batter into a 9 x 5-inch loaf pan coated with nonstick spray.
  6. Bake at 350°F (175°C) for 45 minutes or until a toothpick inserted in the center comes out clean.
  7. Remove from oven and let stand for 10 minutes before removing from the pan.
