Ingredients

  • 2 c. applesauce
  • 1 (3 oz.) apricot jello
  • 1 (3 oz.) lemon jello
  • 1 (12 oz.) can Sprite
  • 1 tsp. grated orange rind
  • 1/4 c. orange juice
  • 1 c. chopped apple
  • 2 tsp. chopped nuts

Instructions

  1. Heat applesauce until bubbly. Stir in and dissolve both jellos.
  2. Stir in Sprite, orange peel, and orange juice. Chill until partially set.
  3. Add chopped apple and nuts. Turn into a greased mold.
  4. Chill until the mold is firm.
  5. Turn the mold onto a plate and decorate with sugared green and purple grapes, if desired.

Tips & Substitutions

For a more pronounced orange flavor, consider using fresh orange juice instead of store-bought. If you want to reduce sugar, opt for sugar-free jello versions. You can also swap out the chopped nuts for a nut-free recipe, or use seeds like sunflower seeds for added crunch. Add a pinch of cinnamon for warmth, which complements the apple flavors beautifully.

Serving Suggestions

This jellied mold makes a delightful light dessert on its own, but it pairs beautifully with a dollop of whipped cream or a scoop of vanilla ice cream. For a refreshing meal, serve it alongside a light salad, such as Joyce'S Bean Salad, to balance the sweetness. It's perfect for potlucks or family gatherings.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days. To serve, simply slice the jelled mold directly from the fridge. If it becomes too firm, let it sit at room temperature for a few minutes before slicing to ease the process.
