Applesauce Rice Pudding

Ingredients

  • 1 1/2 cups chunky applesauce
  • 1 package (4-serving size) Jell-O vanilla pudding and pie filling (not instant)
  • 3 cups milk
  • 1 cup uncooked Minute original rice or Minute premium long grain rice
  • 1 egg
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Stir applesauce and pudding mix in a large saucepan.
  2. Stir in milk, rice, egg, and cinnamon.
  3. Cook and stir on medium heat until mixture comes to a boil.
  4. Remove from heat.
  5. Cool for 5 minutes, stirring twice.
  6. Pour into dessert dishes or a bowl.
  7. Serve warm. For chilled pudding, cover surface with plastic wrap or wax paper.
  8. Refrigerate for at least 1 hour.
  9. Stir before serving.
