Ingredients

  • 2 1/2 cups quick oatmeal
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup creamy or chunky peanut butter
  • 1 cup margarine
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 c. sugar

Instructions

  1. Preheat oven to 350°F.
  2. In a medium bowl, combine oats, flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the margarine and brown sugar until smooth.
  4. Add the egg and vanilla to the creamed mixture, beating well.
  5. Mix in the peanut butter until well combined.
  6. Gradually stir in the dry ingredients until just blended.
  7. Drop by rounded spoonfuls onto ungreased baking sheets.
  8. Bake for 10 minutes or until golden brown.
  9. Allow cookies to cool on baking sheets for a few minutes before transferring to wire racks.
