Ingredients

  • 1 cup packed dried apricots, halved
  • 1 cup packed pitted prunes, halved
  • 1 cup packed pitted dates, halved
  • pastry for 2 crust pie
  • 1 1/2 cups water
  • 1/2 teaspoon salt
  • 1 (16 oz.) can frozen pineapple-orange or orange juice concentrate
  • 1 teaspoon vanilla

Instructions

  1. Put apricots, dates, prunes, water, and salt in a saucepan. Bring to a boil over medium heat.
  2. Cover and simmer until fruit is tender and water is absorbed, about 10 minutes, stirring occasionally.
  3. Stir in juice and vanilla. Chill the mixture.
  4. Roll out half of the pastry and line a pie plate with it.
  5. Fill with the chilled fruit mixture.
  6. Roll out the remaining pastry and cut into 3/4-inch strips.
  7. Arrange the strips in a lattice pattern on top of the pie.
  8. Brush the pastry with milk or egg wash.
  9. Bake in a preheated 425°F oven on the bottom rack for 30 minutes or until golden brown.
  10. Allow to cool. Serve slightly warm or cooled, topped with whipped cream if desired.
