Ingredients

  • 3/4 c. sugar
  • 1 egg
  • 1 1/4 c. milk
  • 3 c. Bisquick mix
  • 1 c. finely chopped apricots
  • 1 1/2 c. chopped nuts

Instructions

  1. Preheat oven to 350°.
  2. Grease a 9 x 5 x 3-inch loaf pan.
  3. Mix the sugar, egg, milk, and Bisquick mix; beat hard for 30 seconds.
  4. Stir in the chopped apricots and nuts.
  5. Pour the batter into the prepared pan.
  6. Bake for 45 to 50 minutes, or until a cake tester stuck in the middle comes out clean.
  7. A crack in the top is typical.
  8. Cool before slicing.
