Ingredients

  • 1/2 lb. dried apricots
  • water
  • 1/2 cup sugar or less if using apricot brandy
  • 1/16 teaspoon salt
  • Cognac or apricot brandy to taste (approximately 3 to 4 Tbsp.)

Instructions

  1. Wash and cook dried apricots in water as directed on the package.
  2. Puree the cooked apricots using a food mill, blender, or food processor, about 3/4 cup at a time.
  3. Add sugar and salt to the apricot puree.
  4. Stir and cook the mixture over moderate heat for 4 to 5 minutes.
  5. Add Cognac or apricot brandy to taste and stir.
  6. Serve the sauce over puddings or plain cake.
