Ingredients

  • 3/4 c. vanilla wafers or graham crackers, crushed
  • 1/2 lb. dried apricots
  • 1/4 c. butter or oleo
  • 1 c. powdered sugar
  • 1 egg yolk
  • 1/4 tsp. almond flavoring
  • 1 c. whipped cream

Instructions

  1. Line pie
  2. plate
  3. with
  4. 1/2 cup of the crushed wafers or crackers.
  5. Cream
  6. butter
  7. and
  8. sugar thoroughly.
  9. Add egg yolk and almond
  10. extract
  11. and cream some more.
  12. Spread over crumbs. (For easier
  13. spreading, dip knife in egg white.) Put apricots in blender
  14. or
  15. food
  16. processor
  17. and
  18. mince fine.
  19. Spread over mixture.
  20. Cover with whipped cream, beaten stiff, and top with 1/4 cup crumbs.
  21. Let chill in refrigerator at least 4 hours.
