Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 2 jars apricot tapioca baby food
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Beat sugar and vegetable oil in a mixing bowl.
  2. Add eggs one at a time, beating well after each addition.
  3. Add one jar of apricot tapioca baby food and mix thoroughly.
  4. Add half of the flour blended with cinnamon, salt, and baking powder; then beat in the remaining flour.
  5. Pour batter into a greased and floured tube pan.
  6. Bake at 350°F (175°C) for 1 hour.
  7. Let cool right side up.
  8. Turn cake out onto a cake plate and sprinkle with powdered sugar.
